This is 12 ounces of beef laden with 4-5 ounces of cheese–a heart attack in a bun! haha!
Look at the size of these babies! These burgers are seasoned with my favorite house seasoning (4 parts salt + 1 part ground pepper + 1 part garlic powder) plus some Montreal Steak Seasoning. The cheese you see on top is smoked swiss cheese. What you don’t see is that each of these jumbo burgers is stuffed with spicy habanero cheddar cheese. YUM! But wait! Don’t stop there! What is this?
Ahhh! I saved the best for last. This is the SHAZAM! element. This stuff puts a great burger into taste bud orbit! BAM!
Don’t worry. I won’t leave you wondering what is in this delightful condiment. Here’s the recipe:
Smoky Chipotle Garlic Bacon Jam
3 cups white onions
12 oz bacon
2 chipotle peppers in adobo sauce
3 tbsp minced garlic
2 tbsp apple cider vinegar
1 tbsp coarse ground black pepper
2 tsp molasses
1/2 tsp hickory smoked salt
1 tsp liquid smoke
Pulse onions and chipotle peppers (with a little adobo sauce from the can) in food processor to a rough consistency. Quarter bacon slices and fry together with onions and peppers until bacon is a little rubbery. Then add in vinegar, molasses, garlic, and spices. Cook on medium low for another 30 minutes (or until bacon is slightly chewy-crispy) stirring frequently. Turn off burner and let cool for a few minutes. Put the entire mixture into a food processor and pulse just a few times to get a roughly chopped pasty consistency.
